This course is for qualified cooks who want to develop professionally in the areas of practical cookery and kitchen management. They will develop a broad range of practical and theoretical skills for the management of a dynamic and innovative kitchen environment. This course builds on the trade cook's qualification by providing more advanced practical cookery skills. In addition they will develop human resource and communication skills for effective supervision, customer service, marketing, sales and team development, whilst exercising their own judgement and flair. Career opportunities include: executive chef; chef de partie.

Students must have completed Year 10 or equivalent. They must have proficiency in English with academic IELTS score of 5.5 or TOEFL (iBT) score of 46 or Certificate III in English for Further Study at TAFE NSW or equivalent.

Padstow College was opened in 1981 in landscaped surroundings formerly occupied by market gardens. It is one of nine South Western Sydney Institute colleges that provide high quality vocational education and training opportunities in the region, and they have built sold relationships with local industry and community organisations. Conveniently located only a 10 minute walk from suburban rail system and less than a five minute drive from the M5 motorway, the college provides vocational training in the areas of ABE, aeroskills, automotive, business studies, ESOL, floristry, general education, horticulture, hospitality, information technology and outreach. The college is a metropolitan Centre of Excellence for Horticulture, encompassing arboriculture, bush regeneration, conservation land management, floristry, landscaping, parks and nursery courses. It has an award-winning floristry section that competes in national competitions and a Floristry Shop open to the public. It is also a state centre of excellence for aircraft maintenance training. The Padstow College Aeroskills Centre is one of Australia's largest trainers of non-military aircraft maintenance engineers in Australia. It also have outstanding facilities for tourism and hospitality, including an operational training restaurant, restaurant padstow, which is open to the public for lunch and dinner, and is very popular in the region.
