This course is designed for students seeking a career in hospitality, concentrating on commercial cookery. The course is suitable for those who may be currently working in the industry and wish to obtain a formal qualification. It provides participants with knowledge and experience in practical food production. The course will also give them basic management skills to enhance their job opportunities in the commercial area. It may lead to employment in a commercial kitchen as a qualified cook. Employment could be in hotels, restaurants, bistros, hospitals any commercial kitchen environment. There may also be opportunities to work in a supervisory or middle management position within a commercial environment.

Students must have successfully completed the Australian year 12 or equivalent in their country. They must have achieved a minimum of either IELTS score of 5.5 (academic) (no band score less than 5.0) or TOEFL paper based score of 530 (minimum TWE 3.5) or TOEFL computer based score of 197 (minimum TWE 3.5) or TOEFL internet based score of 71 (minimum 17 in all sections).
