This course provides the skills and knowledge for an individual to be competent as a manager in any hospitality functional area. This individual would possess a sound theoretical knowledge base and be able to use a range of specialised, technical or managerial competencies to plan, carry out and evaluate their own work and/or the work of their team. Work would be undertaken in various hospitality settings, such as restaurants, hotels, catering operations, motels, clubs, pubs, cafes and coffee shops. Students successfully completing Diploma should be able to enter Hospitality Management position. Students entering the Diploma following completion of the Certificate III in Hospitality (Operations) and the Certificate IV in Hospitatlity (Supervision) or substantial hospitality industry experience in Front Office and Food Preparation will be able to complete the remainder of the Diploma in one year of full-time study. Work would be undertaken in various hospitality settings such as restaurants, hotels, motels, clubs, pubs, cafes and coffee shops. Possible job outcomes include: restaurant manager, kitchen manager, front office manager, housekeeper, chef, sous chef, gaming manager, motel manager, unit manager (catering operations).

Applicants may have successfully completed a minimum of Year 10, or be a mature age student, or have the necessary underpinning knowledge and skills in key competencies. It is essential that applicants undertake an interview with the course coordinator. They must also demonstrate their English language proficiency with an overall minimum TOEFL score of 550 and score of 4.5 in the Test of Written English (TWE), valid for two years, from the date of the test to the date of commencement at CDU; or with a minimum CBT score of 213 and a minimum score of 4.5 in the Essay Rating; or with a minimum IBT score of 79 and a minimum score of 20 in writing.
