This course strongly focuses on giving students a thorough appreciation of ideas ranging from the management of the overall customer experience in resort restaurants to the appreciation of the complex, integrated processes found in catering establishments. They will be given ample opportunities to allow their passion for the culinary arts to flourish, their creative voice to be heard and their commitment to providing great food and wine to be translated into operating and managing a restaurant. The curriculum is designed to take students through critical ideas: food product knowledge, wine and beverages, basic business skills and an understanding of the culinary and catering industries. It also covers more advanced areas of study such as revenue management and marketing for the restaurant and catering industries. Throughout the course, their culinary and service skills will be honed through hands-on practice and projects in the state-of-the-art kitchens and restaurants on the campus. In addition, they will undergo a 20-week internship in their senior year in a commercial environment. career opportunities can occur in service areas such as in hotel and independent restaurants and cafes, catering companies and other food and beverage related enterprises, or in the supply area such as in food and beverage distribution. Graduates also have the option to further their studies in universities in Singapore and abroad with credit exemption or advanced standing.

Applicants from India should have completed Indian Certificate of Secondary Education (ICSE) Standard 10/12 or all India Secondary School Exam (CBSE) Standard 10/12 or Secondary School Leaving Certificate (SSLC) Standard 10/12 or all Anglo-Indian School Leaving Certificate Standard 10/12, Tamil Nadu or Matriculation Examination Certificate Standard 10/12, Tamil Nadu or Secondary School Leaving Certificate (SSLC) Standard 10/12 awarded by the Board of Matriculation, Tamil Nadu or Secondary School Leaving Certificate (SSLC) Standard 10/12 awarded by the Maharashtra State Board or Secondary School Leaving Certificate (SSLC) Standard 10/12 awarded by the Kerala State, all the qualifications mentioned above must have an overall score of 70 per cent in standard 10 or 65 per cent in standard 12. Students from other countries should have country specific requirements equivalent to Singapore. They should also have obtained a minimum English proficiency score of IELTS 5.0/ 5.5, TOEFL 500/ 550; minimum EL grade required for Singapore-Cambridge GCE O Level are Grade C6 and Grade D7.
