This course will teach students how to prepare a range of bread, pastry products, cakes, cake decorations and hot, cold and frozen desserts. On completion of the course, students should be able to prepare mise en place for baking and pastry; process basic baking ingredients; prepare a range of bread and pastry products; prepare a range of sweet and savoury pastry fillings; prepare a range of cakes and carry out cake decoration; prepare a range of hot, cold and frozen desserts; prepare petit fours, chocolates and pralines; evaluate and store finished products; and present finished products for display. Graduates with a GPA of 2.8 and above may also apply for progression to related Higher Nitec courses offered by ITE. Nitec in Pastry and Baking graduates are employed as Commis Cook in hotels, restaurants and bakeries. There are excellent opportunities for career advancement to supervisory positions and beyond. The challenge is for students to prepare themselves by upgrading their technical skills and knowledge through higher-level courses.

The modules include - Core Modules (47 credits): Effective Communication 4, Customer Service 4, Introduction to Baking Science 4, Pastry Basics 4, Cake Mixing and Baking 5, Bread Production 5, Desserts and Petit Fours 5, Chocolate and Pralines 4, Decorative Work 4, Industry Attachment 8; Life Skills Modules (10 credits): Life Skills for Personal Development 8, Sports and Wellness II 1, Sports and Wellness I 1; Elective Modules (6 credits): Pastry Menu Planning and Recipe Costing 3, Asian Sweets 3, Small Business Management 3, Workplace First Aid and CPR 2, Mathematics (Level 9) 3, Mathematics (Level 10) 3, Mathematics ‘O’ I to II 2 or 3, English Language ‘O’ I to II 2 or 3, Overseas Experiential Programme 2 or 3.
