The aim of the Professional Chef Diploma or Certificate is to equip you with the skills and knowledge necessary to pursue a career as a chef and furthermore, to provide you with the opportunity to pursue a Higher Education qualification. During the coming academic year you will develop your knowledge and skills both practically, within the working environments and academically within your theory classes. This course is very practical and involves working in the kitchens and restaurants. In our kitchens you will learn how to prepare and cook and present a wide variety of dishes covering different preparation and cookery methods. You will be taught in the restaurant, professional service skills which will help when you work in restaurants outside the college as well as functions within the college. Students will complete Function Skills in literacy and numeracy during the course which will aid with the assignments and short answer exams. Units of Study: 101 Introduction to the catering and hospitality industry, 202 Food Safety in catering, 103 Health and safety awareness for catering and hospitality, 104 Introduction to healthier foods and special diets, 105 Introduction to kitchen equipment, 106 Introduction to personal workplace skills, Craft Units -Kitchen, 107 Prepare and cook food by boiling, poaching and steaming, 108 Prepare and cook food by stewing and braising, 109 Prepare and cook food baking, roasting and grilling, 110 Prepare and cook food by deep frying and shallow frying, 111 Regeneration of pre-prepared food, 112 Cold food preparations, 113 Introduction to professional cookery - Craft Assessment.
