This program consists of courses that define the primary sources of revenue generation in the industry: restaurants, lodging facilities, clubs, catering and special events, casinos, spas, beverage operations, etc. The choices enable a student to pursue an area of concentrated study in any one of eight tracks, organized in four broad areas: those that revolve around food service and beverage operations (tracks 1-4), specialty operations such as clubs, casinos, spas, etc. (track 5), revenue management (track 6), and facility asset management, planning, and design (tracks 7 and 8). The tracks are beverage management, corporate food and beverage operations: restaurant, resort, and hotel chains, design, development, food and beverage support services, independent restaurant operations, revenue management, specialty operations: clubs, casinos, catering, and spas.

Students must meet the following preparatory courses: 16 units, including fourof English, three of mathematics, and two of science (including one of chemistry) and also recommended: additional mathematics, science, and three years of a foreign language. Students seeking admission must have the equivalent of an American high school education at the time of admission. International students whose first language is not English must have taken the TOEFL/IELTS exam. A minimum TOEFL score of 600 on the paper-based test or 100 on internet-based test and the recommended minimum IELTS score of 7 is needed to be considered for admission. They will waive the TOEFL and/or IELTS requirement for students who have achieved a score of 670 or higher on the critical reading section of the SAT reasoning test.
